375g fruit mix ( sultanas etc )
300ml cold tea
125g caster sugar
1 egg beaten
A pinch of mixed spice<\/p>\nMethod<\/h3>\n
Sieve flour into mix and add sugar, spice and egg mix all this together with a whisk
Wrap ring or coin or some charm or other in parchment paper and add to mix
Transfer to a greased tin either 8\u201d round or 2lb loaf tin
Bake in a pre heated oven for 1 hour at 170 c \/ 325f\/ gas 3 for approx 1 hour until
it has risen and is firm to touch
Cool on a wire tray, when cooled wrap in parchment and keep for 2 days
